Seeing Red

Tomatoes!! They are covering ALL my cupboards. And they are taking up our time!! haha...that is a good thing though. We have almost NO tomatoes compared to other years, but it sure seems like a lot! Whew. We have been working hard on trying to do something with all of these red (and yellow!) tomatoes. And Tate has been a great big helper, as usual. :) First we took all the ripe tomatos out of the boxes downstairs and Tate organized them all so nicely on the coffee table. Then he put them all into big bowls for me to carry upstairs. Emily actually "helped" me the first night since Tate was already in bed. I put Emily in my wrap (what would I do without that thing?!?!! I think I would be lost without it!) and me and her made a huge batch of tomato soup and canned it. But that only got rid of about 1/2 of the big piles of red and yellow on my counters. So today Tate and I started to make a big batch of homemade salsa while Emily was napping. We didn't get finished though...guess that'll be our project for later on today! I love having homemade/canned tomato soup, salsa, pizza sauce downstairs - it really does taste a lot better than the store bought stuff - plus I know exactly what's in it. ;) So anyways, wish us luck as we continue to "see red" for a couple more days!!

Those tomatos look so yummm...my husband hates them so I rarely get to keep them in the house. I used to eat tomatoes like apples...with just a little bit of salt. I know wierd :)

I know how you feel!! We've got tomatos, tomatos, and more tomatos.
Yesterday I made two batches of salsa and barely dented my collection!

Yum! Our crop wasn't so great either this year but it looks like you still got a decent amount. I just picked the rest of the unripe ones yesterday but instead of letting them ripen I made fried green tomatoes. Sooooo good!

I don't like raw tomatoes, but I love salsa and sauces made with tomatoes. And now, thanks to you, I think I shall make spaghetti for dinner tonight. :)
